Whether you’re a budding maker or just want to sharpen your understanding, breaking down the pig is an integral part of the salami making processes. Troy Wheeler from Meatsmith Specialty Butcher and Wine Merchant will guide you through from nose to tail and show you which part of the pig all the meat for your favourite cold cuts comes from. Cut Throat Knives will also show you how to care for and sharpen your knives correctly.
