Summer Spice is a 6-course gastronomic exploration of the relationship between whisky and spices, with one of the world's best Indian chefs. Join us as we present a unique gastronomic experience, the likes of which you will not find anywhere else in Sydney.

A 38-year veteran of the kitchen, master of his craft and the pioneer of Indian cuisine in Australia, chef Ajoy Joshi creates bold and adventurous Indian flavours in his own unique style from industry mainstay Nilgiri’s in Cremorne.

Nilgiri’s turned 18 this year, and for their new home in Cremorne Ajoy and wife Meera decided it was the right time to do something different to suit the new premises & the kitchen…to interpret Indian food in their own way! With that in mind, Ajoy cooks some classics from Indian cuisine, but with a twist; this is his way of letting people know that every single Indian dish has many versions, interpretations or avatars and his aim is not to alter but add a bit of himself to the dish which is cooked with all the fursat (genuine patience) and mohabbat (untold love)!

Ajoy’s spectacular food will blow your mind as the Whisky Uncovered team curates a journey to explore the deep synergies of whisky and spices.
