Celebrate and indulge yourself in an exquisite night of fine Italian fare at Ristorante Fellini for the ultimate waterfront New Year’s Eve dinner. The Gold Coast’s most-awarded fine dining establishment celebrates in classic Italian style, indulging diners with a delectable seven-course degustation menu accompanied by breathtaking views of the Broadwater.

Fellini Ristorante chefs, headed by executive chef and Fellini co-owner Richard Burt, will serve up a sensory experience like no other, with the final course a one-of-a-kind dry ice floating dessert that must be seen to be believed.

"Our seven-course degustation menu is a delicate fusion of traditional and modern Italian flavours that has been carefully designed to delight all of the senses," he said.

"Guests will be served fresh seafood, delicious figs, imported prosciutto as well as homemade pastas and a choice of beef tenderloins, quail or Atlantic salmon for their main.

"Dessert is a visual symphony; it features mouth-watering chocolate gelato, pistachio floss, Italian meringue and a vanilla cone atop dry ice to give the appearance of a floating plate."

The evening of flavoursome fare will begin with authentic Italian homemade crusty bread served with extra virgin olive oil, roasted garlic and balsamic and an appetiser of watermelon and balsamic pearls.

This will be followed by prawns, scallops, calamari, mussels, zucchini ribbons, pomegranate, chardonnay vinegar, mint and extra virgin olive oil. Next, guests will be treated to figs, prosciutto, gorgonzola and cream before a refreshing interlude of raspberry sorbet and mint to cleanse the palate.

Diners will then be treated to pappardelle affumicate e ragu bianco di cervo featuring smoked pappardelle, venison, vegetables, sage, rosemary, thyme, white wine and pecorino. Following this, New Year’s Eve guests will be treated to a choice of three mains:

- Bistecca alla griglia con cipolle arrostite – beef tenderloin, spinach, potato mash, extra virgin olive oil, reduced jus, parsnip chips and roasted onions; or
- Quaglia arrosto con zucca e farro – quail, pumpkin, farro, zucchini, green peppercorn, reduced jus, extra virgin olive oil; or
- Salmone atlantico con pelle croccante – Atlantic salmon, fennel, artichoke, lemon, fried capers, cream, parsley

Finishing the degustation on a sweet note, guests will be treated to gelato al fumo con ghiaccio, a dry ice floating dessert featuring chocolate gelato, pistachio floss, Italian meringue and vanilla cone. Ristorante Fellini co-owner Carlo Percuoco said there was no better way to start a new year than a night of fine wine, delicious Italian food and great company.
