Makers of quality in their respective culinary areas, David’s welcomes David Jones of Dalwhinnie Wines for a five-course dinner that flaunts delicious pairings of Zhou family recipes with a premium Victorian vineyard.

Wine aficionados are invited to experience the first-time collaboration between the David duo. There is a mutual commitment to delivering excellence using local quality ingredients, and both Davids’ stories are rich with family history, spanning over two decades. Dalwhinnie Wines is very popular in the city of Shanghai; the collaboration aims to match a symphony of modern Shanghainese staples with the texture, elegance and balance to be found in Jones’ Dalwhinnie wines.

Following a string of popular wine-matched dinners in Shanghai, David Jones will host the event at David’s, giving diners the opportunity to meet the maker and indulge in canapes and new dishes created especially for the event. For over 25 years, Dalwhinnie Wines has flourished as one of Victoria’s great family-run vineyards under Jones’ guidance. Diners will be taken on a culinary journey where Jones will explain the intricate wine pairings through the lens of modern Shanghainese dining.

Guests will be welcomed with a quartet of David’s canapes before five-courses, that includes:

- Spanner crab served with soft egg, garlic shoot and puffed fried rice.
- Free range Berkshire pork braised with zhenjiang vinegar lacquer and daikon.
- Roasted quail with red cooked chestnut, buckwheat and wild mushroom.
- Ranger Valley wagyu beef in chinese brassica with oxtail and truffle cooked in xo
- Poached quince in ginger tea and goji berry ice cream with cultured rice and gingerbread

The Pyrenees region west of Melbourne where Dalwhinnie Wines is based harbours unique climatic conditions that produce wines of graceful quality. Dalwhinnie wines are characterised by its unwavering consistency between vintage variations that solidifies their premium reputation for Shiraz, Cabernet and Chardonnay.

Matched wines on the evening will include top drops from the Moonambel range; 2017 and 2018 Chardonnay, 2015 Shiraz, 2008 and 2015 Cabernet; the Single Vineyard range, 2013 The Pinnacle Shiraz and the subtle blend Cuvee Hilary Blanc de Blanc Vintage 2009. The results—multifaceted body, subtle intensity and a delightful complexity. As a final gesture of appreciation, dinner will finish with Zhou’s home blended tea—a signature touch from David’s, enjoyed by locals.

David’s is a contemporary Shanghainese restaurant inspired by Zhou’s hometown Zhouzhuang, a water village in which his family’s recipes originated. Loved by locals for over 20 years, it’s no secret that David’s authentic menu showcases some of the finest Shanghai comfort food in town while treating guests as an extension of Zhou’s own family.
