Salmon with mirin, Atlantic scallop ceviche, tuna tartare, olive tapenade, lemon dill crème fraiche, anchovy brioche crisps

Main Course
Choice of:
Mustard crusted corn-fed chicken, chardonnay cannellini stew, potato and smoked cod cigar, water spinach velouté;
or
Charred Tasmanian lamb chop, gnocchi alla romana al pesto, jardinière vegetables, herb roasted tomatoes, madeira glaze;
or
Grain-fed eye fillet, dauphinoise potatoes, whipped gin celeriac, vegetable pearls, port jus

Dessert
High on chocolate - Fine Valrhona Chocolate Tasting Platter:
Milk, white and dark triple chocolate charlotte, chilled chocolate cream ball with whisky chocolate pipette
