Salmon with mirin, Atlantic scallop ceviche, tuna tartare, olive tapenade, lemon dill crème fraiche, anchovy brioche crisps

Main Course

Mustard crusted corn-fed chicken, chardonnay cannellini stew, potato and smoked cod cigar, water spinach velouté;
Charred Tasmanian lamb chop, gnocchi alla romana al pesto, jardinière vegetables, herb roasted tomatoes, madeira glaze;
Grain-fed eye fillet, dauphinoise potatoes, whipped gin celeriac, vegetable pearls, port jus
