The menu:

Celeriac, Prosciutto and Beets
Hand-made Gnocchi, Morten Bay Bugs and Bisque
Venison, Chestnuts, Roasted Cauliflower and Port Wine Jus
Home Grown Granny Smith Apples, Butterscotch and Cardamom

The menu will be based on top quality winter produce from the local area. The menu will feature techniques chef Nicolas Smeets has learnt during his time working in a selection of unique and creative fine dining restaurants around the world. The lunch will be held in the Bickley valley cottage with spectacular views overlooking the Bickley Valley.
