Bite-Sized Recipe: Chicken Cacciatore

Did you know... Cacciatore when literally translated from Italian means ‘Hunter’.

 

Chicken Cacciatore – Ingredients

  • 1kg chicken thighs or chicken pieces
  • salt and pepper
  • 1-2 tbsp olive oil
  • 2 large onions
  • 1 carrot
  • 2 celery stalks
  • 2-3 cloves of garlic
  • 2 ripe tomatoes
  • 400g passata (pureed tomatoes)
  • 1.5 cups white wine
  • 2 sprigs of fresh rosemary
  • 6 bay leaves
  • handful of kalamata olives
 Chicken Cacciatore – Method
  1. Preheat the oven to 180°C.
  2. Heat a large oven proof pot over a medium heat and add the olive oil.
  3. Rub the chicken thighs or pieces with salt and pepper and fry until golden brown. Remove from the pot and set aside.
  4. Finely slice the onions, dice the carrots and celery and add to the pot. Sauté for 10-15 minutes on a low heat or until tender.
  5. Finely slice the garlic cloves, add to the pot and stir for another minute.
  6. Roughly chop the tomatoes and to the pot with the passata, white wine, rosemary, bay leaves and olives. Add the chicken back to the pot. Mix all the ingredients together, turn the heat up and when it begins to boil, cover and place in the oven for 1-1.5 hours or until the chicken is tender and is falling off the bone.
  7. Remove the pot from the oven and season to taste.
  8. Allow to cool slightly before serving.
  9. Enjoy!
