Salvatore (Sam) Scullino, the creator of the Gelobar’s famous gelati recipe, was born in 1957 at Scido in the Province of Reggio Calabria, Italy. He was the youngest of 8 children. At an early age, Sam commenced assisting his elder brother Antonio at “Il Pasticcere Scullino” located in Turin, Northern Italy. With over 57 years of experience, “Il Pasticcere Scullino” continues to operate and service Italians all over Turin and surrounding areas.

In recognition of the Scullino family’s popularity in the manufacture of gelatin and pasticceria, the eldest brother Antonio was recognised by the Italian authorities and bestowed an Italian knighthood “Cavalliere di Lavoro” in around 2000 in recognition of his talents as an experienced Gelati and Italian pastry maker and artisian.

In 1982 Sam arrived in Australia and in early 1990 established the current gelati operation at Gelobar at its current location Lygon Street, East Brunswick. In collaboration with his brother Antonio, Sam developed particular recipes and artisian style gelato and traditional Italian pastry for Italians and alike, which is servicing the connoisseurs of Italian-style cakes and gelati in Melbourne for over 20 years.

Whilst initially obscure, Sam together with the support of his wife Rita and daughters Carmen and Josephine were able to transform the little shop into an iconic business famous for its gelato and traditional gelato cakes and pastries, a reputation which exceeds the Melbourne metropolitan area.

Apart from introducing Melbourne to the famous recipes of gelati made by Sam, Gelobar has continued to expand.
