With Chef Max Paganoni at the reins, his dedication to utilising and promoting local produce is obvious. From the seasonal a la carte menu to a plethora of special events, the flavours change to suit the situation, however the use of fine Mornington Peninsula produce does not. Whether it be strawberries from Sunny Ridge, cherries from Ellisfield Farm, local grilled flat head tails in Red Hill Brewery’s pale ale beer batter or Delgrosso’s apples and Red Hill Cheese, the flavours remain seasonal and fresh.
