A Journey Through Australia's Seasons By Lucky Penny

The event will begin with a welcome to country and smoking ceremony by the Boonwurrung people as your senses are entertained through the artistic creation of food, drinks, music, performance and decor.

After we are all welcomed by the traditional owners of the land we will be offered an amuse-bouche (or mouth pleaser for the non-French speaking) which will pay tribute to the "life-giving Ocean" the birthplace of life itself—Kingfish ceviche, burnt mandarin, pickled apple, sandfire, dill seafoam.

From here we will be taking you from the refreshing Oceans to the Mountain tops celebrating the appearance of the sun slowly melting snow caps and the unveiling of the fertile earth. Combining to spring forth a rainbow of flavour and colour—Baby Beetroot Medley (Candy, Golden, Red) pickled beetroot leaf, toasted hazelnut, fried saltbush, Hazelnut+ Meredith goats cheese puree, goats cheese snow.

As the journey continues we walk through the dry winds blowing through the volatile oil filled forest, ready to set your taste buds alight. Panfried Ling, lemon balm butter, burnt onion powder, vegetable crisps, parsnip puree, mixed herb dust, native olive and sundried tomato soil.

We stop and breathe, and take in our surroundings courtesy of a lemon myrtle palate cleanser before we set our eyes on 'The Sacrifice'. With the intense Australian heat comes the destruction of life and vegetation, leaving behind burnt offerings of Chargrilled Kangaroo fillet, wattleseed dry rub, savoury macadamia custard, mountain pepper berry glaze.

To round out the journey we will kick back on the deck, looking out to the mountains, with the sweet golden sun rays on our face and liquid bliss on our lips. Reflecting on the journey and guidance from Mother Nature on another year in this amazing country. Oaked-Gin, Peach and Sea Salt Martini accompanied by Peppermint Gum after dinner mint.

The night will continue upstairs until the wee hours of the morning, sharing a yarn and a tale with friends old and new, as your ears experience the unique creations from the musical duo The Journey.
